WHere is a home-style interpretation of a cocktail featured on our latest drinks list. This is a large-volume prepared mix that is packed full of flavours associated with Christmas time, which makes it excellent for your holiday party. Save the extra citrus syrup to use in morning drinks, sweets, or to mix another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Place every components in a saucepan, bring to a light boil, mixing so the sugar melts. Then, remove from the stove and leave to reach room temperature fully. Pour into a clean bottle, close it and store chilled, where it will keep for up to a month.
For the Cocktail Base: Mix every liquids into a large bottle, let it rest for 60 minutes, then strain best through cheesecloth, so it's completely strained.
To serve: Add 85ml from the premix into a mixing glass packed with ice, gently stirring lightly for a minute to chill. Filter into an frosted cocktail glass or a similar vessel, top with a few cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
